Peeling Eggs

How many times have you struggled to peel your hard-boiled eggs?
I think I have tried every tip or trick ever suggested.
I seldom eat them, but Mr. LB loves them-
especially pickled.
I finally got so frustrated that I just thought,
"Forget it.  I'm cooking them like rice."
And guess what?
It worked!
So what I do is:
Place the eggs in the pot single layer.
Cover with water.
Put a lid on the pot. 
(I think this is important and never read or heard before.)
Place on burner, on high for about 7 min.
This is about how long it takes to come to a boil.
Make sure the water has come to a boil.
Then turn down to low for 13 min.
Remove from heat and place in sink
with cold water trickling over the eggs
until eggs are cool-ish (roughly room temp.)
Then peel.
I hope it works as well for you as it has for me.
This has been my process for about the last year.
I wanted to make sure it wasn't just a fluke.

Also, how I make rice~
Rinse rice, then one part rice to two parts water.
Cover and cook on high for 7 min.
then turn down to low for 13 min.
Rice is done and ready to eat.

  1. Your method sounds similar to one I go by that I found in a church cookbook. Its not the same but similar. The one I use is more about the yolk being cooked done while avoiding the green gunk that forms on the yolk if overcooked rather than addressing the problem of peeling. I'm going to try yours when next I boil eggs to compare them on both counts. When making deviled eggs with a dozen boiled eggs the last thing I want ti deal with is seemingly glued on shells.

  2. I don't cover mine with a lid but cook them the same way with the same results.
    Now, how do you pickle your eggs? That is something I have never done.

    1. Hubby eats both pickles and pepperoncinnis. When there is an empty jar of each, I mix the pickle and add hard boiled eggs. Put back in the fridge for 1 month, then eat. I've tried my own pickle recipes but he likes this and it's easy 😊

  3. I never time when boiling eggs, but I will try your method next time. :)

    When cooking rice, my mom puts rice in the pot and pour water until water level comes to the first joint of her middle finger. She rarely measure ingredients.

  4. After boiling, I leave them in cold water for a while. Then roll them to 'crack' them. Use a soup (large) spoon, to put under the shell, and take shell off. I love it. It works for me. My husband's idea.

  5. That's pretty much the way we do eggs too. The only thing I hate about the process is how they smell!! Fortunately the taste of egg salad sandwiches makes up for the stink.

  6. I haven't made hard boiled eggs in quite a while but I definitely struggle with peeling them! I'll try your technique the next time I make them.
